Two-Ingredient Banana Ice Cream

Have you got some bananas in the fruit bowl, verging on the brink of being overripe? You might be tempted to make them into banana bread but, honestly, this is a much better use for them.

Those past-their-best bananas could be turned into a rich, creamy, indulgent dessert, minus the calories. Just two ingredients are all you will need to make this delicious peanut and banana ice cream.

Dairy free, gluten free, no added sugar and no preservatives – it’s hard to believe (especially when you taste this delicious treat) but this is actually good for you.

This two-ingredient banana ice cream is best eaten on the day it is made. I’m sure this won’t be a problem though…

Ingredients

4 ripe bananas
2 tablespoons real peanut butter (made from 100% peanuts)

Method

1. Peel the bananas and slice them into 3cm chunks.
2. Place on a tray lined with baking paper and put in the freezer for 2 hours until firm.
3. Pop the frozen banana and peanut butter into a high-powered blender or food processor (one that can handle crushing ice). Blend on high speed until combined – if you find it isn’t really blending too well you could add a little milk or yoghurt.
4. Eat as is for a soft-serve style treat or place back in the freezer for half an hour to firm up.

Extras

You can tailor this even more depending on your tastes. Of course, they will no longer be quite as healthy, but they will be even more delicious!

The following additions are some of my favourites:

• Add two scoops of Nutella instead of the peanut butter
• Add a tablespoon of cocoa powder
• Throw in a teaspoon of cinnamon
• Add half a cup of frozen berries
• Try half a cup of frozen mango in the mix
• Pour in a handful of coconut
• You can even leave the peanut butter out completely and enjoy the simplicity of a pure banana treat
• Sprinkle nuts, choc chips or honey over the ice cream to your heart’s content
