Patrick lives in North Bondi. He is originally from a little village called Bidart near the Spanish border in the south west of France but came to Sydney in 1985 on a tourist visa and has never looked back. Patrick spends most of his days making great coffees at Sparrow Café and Bar at the Paris end of Gould street in Bondi Beach. Patrick shares his local favourites with The Beast…

FAVOURITE BEACH: North Bondi pool, rock pool and Ben Buckler. It’s a really good spot to go with the three boys.

EATERY: I don’t really eat out anymore but takeaway fish and chips on the grass at sunset is a winner.

WATERING HOLE: I don’t really drink out anymore either but a few red vinos and a barbecue at home with friends (or by myself) is real bliss.

SPORTING TEAM: The Tigers. They certainly will win next year! Sorry guys.

MUSIC: ’70s and ’80s classics. More recently Arcade Fire, Tired Pony, Sigur Ros and Brett Hunt (another great local muso).

PERSON: My missus Lara. She bakes the best muffins for Sparrow everyday. She is also a wonderful mum.

WEEKEND ACTIVITY: Work in the morning, beach in the afternoon and footy in the evening.

QUOTE: “It’s not where you’re born but where you belong.” – my quote when people ask why I came to Oz.

FAVOURITE THING ABOUT YOUR WORK: Meeting new people, having amazing discussions and drinking Paul Bassett coffee!

FINAL WORD: I guess you will have to come to Sparrow to hear it from me while having a latté… and Dan, I told you I would not mention politics!
